Hi, I’m Noe.

My dad started Bruges 21 years ago—the same year I was born—using his 80-year-old family recipe. What began as a small waffle cart eventually grew into two restaurants. But even after all those years of hard work, there was still no clear end in sight for him.

That’s when I made a decision: I dropped out of college to go all in on sharing our packaged waffles with the world. At 21 years old, my focus is simple—take care of my family and help make my dad’s dream come true.
